Changhua City, Changhua County｜阿三肉圓

This 肉圓 place was recommended to me by several friends, so we visited while in town (given the night market was closed). Decor isn’t bright nor pristine but it’s typical for such places and perfectly acceptable by night market standards: the food is where it’s at. The lady was patient enough to explain what each dish and soup were, given it was our first time. Their 肉圓 ($55) has a thick chewy starch layer encompassing filling of meat, mushrooms, a quarter egg, fried beautifully to a crisp. This last step is not commonly found these days: many joints simply low-soak in oil, and you don’t get the crisp crackling exterior crust. I also ordered the 豬肚湯 (pork stomach soup) from their soup choices ($55) and interestingly, it’s 4-6 pieces of pork stomach poached with scrambled eggs, and then served in their soup base. The stomach is gently cooked so the texture is clean and chewable. Light, refreshing, and the pork stomach reminded me of how my mom used to make it. My kids enjoyed the place, and I’ve added it to my list of return visits for the future.

The small one is 55, the big one (dried scallops) is 110, I ate 55 today, the skin is very Q, delicious.
