Do not say you have tasted the best pig trotters until you try this 化骨猪脚.. Placed an order thinking that the name 化骨 sounded interesting. I declared this dish to be their signature dish! The meat and skin just melt in our mouths and surprisingly didn't taste too oily. There was lots of bone marrow and after sucking out the marrow, with a light bite the bones just flattened and our mouths were filled with even more juices. What was left was only the powdered bones. What a dish! The deep fried black tofu must be taken while steaming hot. It is best complimented with the black sauce home-made spicy chilli. What an experience. The wild boar meat is real authentic and the skin is really chewy Do check out these dishes.
