15 Michelin 1-star restaurants in 30 days between Tokyo and Taipei, and this is one of my favorites. Sometimes, the best food is made by people who have been perfecting 5-6 dishes for 10-40 years. That is the case here. Please, come. The beef stock is light, but deep. In a barely-cooked kind of way. You can taste the essence of beef with just the right amount of salt and spring onion, on the light side. It resembles the lightness of a chicken or shrimp stock. For the price ($40-80 NTD), it’s a steal.
