Ramen can be divided into Japanese flavor and Taiwanese flavor, each with its own characteristics! The taste is good! You can also add noodles and soup, the noodles are springy, the soup is rich, and you can add some char siew rice on the day (really delicious,) If you like ramen, you can go and have a look P.S There may be a queue, but the good stuff is worth the wait

Wow. This place was recommended to me by a local and can only be found in a small alley down the street from Jingnan Station. They're open until 9pm normally and will stay open later if there's a line. They'll stay open until they run out of broth. It's a small ramen shop with less than 10 seats and it's one of Taipei's best kept secrets! The menu is only available in Chinese but if you're will to use Google Translate and go out of your comfort zone, it's worth the journey 5/5 Pork broth ramen NT$280 (it's the 3rd box on the left, from the top): This is a little different from the typical tonkotsu broth you would get at any other ramen restaurant. It's thick, but at a much lower salt level. I didn't have to drink as much water as other tonkotsu ramen restaurants. The lower salt level made it more enjoyable for the entire meal. Thinly cut slices of pork made it easy for the broth to be soaked in making each bite full of flavor. To my surprise, there was chicken in this ramen. I can't read any Chinese and just order things. The chicken was thinly sliced (boiled, I think) and was super juicy. It added another level to the textures of the ramen. The soft-boiled egg was extremely perfect. I don't know if they added something to it (or a special type of egg), but the yolk was a little sweet. As soon as I cut open the egg the yolk mixed in with the broth and kicked things up a notch! I had to take moments to breath during the meal because I was eating too fast. It's so good, it might kill you. Remember to breath. I left super stuffed, but immediately wanted to go back. "Thick Tonkotsu-Barbecued Pork Feast Tonkotsu Ramen" I got to know this ramen shop next to Jing’an MRT station through the ramen enthusiasts club. If you want to say it, come and give it a try! There are two types of soup: Japanese style and Taiwanese style. The main difference lies in the salinity. However, although it is Japanese style, the soup is not very salty. Rich yet gentle and easy to drink. It’s full of pork back fat and has a mellow taste~ The noodles are medium-thin noodles. Unless otherwise noted, the surface is slightly hard Q. It looks chewy, And the thin noodles can hold up the soup better~ There are three kinds of barbecued pork in the barbecue feast, There are three types of chicken, pork plum blossoms and pork belly. Chicken is also cooked at low temperature. However, the black pepper flavor is a bit strong. The pork belly barbecued pork also tastes good. The salty taste is also quite obvious, My favorite is the pork plum blossom barbecued pork. It smells like smoked food.
