Zhongshan District, Taipei City｜魚仔麵（鯛白湯）

Went on a Monday evening. Just like ramen places you order at the machine outside before entering the store, and they just sell snapper (ramen) noodles. The chef offered an extra helping of fish as a bonus, maybe due to the slower weekday traffic? Regardless, the dish shatters my expectations. The broth is milky white and very fulfilling, packed with flavor. The fish is crispy, flaky and overall a delight being half-soaked in the almost syrupy broth. With a plethora of garnish choices - fish/shrimp xo sauce, garlic and ginger it was easy to enjoy every bite. If there was anything to complain about, it would be the soup being a little on the sweeter side, presumably from the combination of nori and the sponge gourd (絲瓜) alongside the tamagoyaki that came with the noodles. As someone with a sweet tooth it was a little too much even for me near the end. Bonus points for the citrus water and jazz music. Will definitely be visiting this place again.
