Tamsui District, New Taipei City｜長興街63牛肉麵

This small eatery (seating for around 20 pax) does a mean bowl of beef noodles. The boss makes the noodles by hand only on order and the noodles are certainly cooked to perfection - we call it "Q" (springy) here, or otherwise "al dente". You can watch him prepare the noodles whilst waiting for your food. We ordered a (1) beef, tendon and tripe noodle soup (NT$140), and a (2) beef noodle (dry) (NT$100), which comes with a bowl of broth/soup. (Ask for chilli if you like a bit of spice). The broth was packed with flavour without being too salty or overpowering. They also have radish in the broth (we had a couple of pieces in the soup), which we like. Ask for as much Suancai (pickled vegetables) or Cong (spring onions) as you like - we find a good portion of these condiments helps to balance the flavour. The boss also let us know that we could ask for extra soup (without additional cost) if we wanted - and we did take him up on this. There's a whiteboard informing customers that they only cook one pot of beef a day. Literally, whilst stock lasts. Highly recommended, and we will definitely try and eat here every time we come to Tamsui.

Great little restaurant!! Noodles are made fresh in front of you! Very tasty and delicious, with very tender beef. Recommended!!

Although you have to pay to eat noodles, I still feel that I have earned a profit and it is incredibly delicious.
