August 2023 This review is for Nishiyama Seimen's Chilled Noodles. I've never eaten at this restaurant, but I really liked the chilled noodles, so I'll report back. At a supermarket in Kanagawa Prefecture, the sample photo looked delicious, so I picked it up, and the fact that Nishiyama Seimen was the reason for my purchase. The boiling time and the amount of hot water to divide the soup were as described, and the ingredients on the finished ramen were the leftover steamed chicken from the previous night's dinner with ginger onion sauce. First of all, the soup is delicious. The taste is reminiscent of Sapporo Ichiban Shio Ramen, with just the right amount of seasoning. The noodles were boiled in 1:30 seconds as written in the recipe. This was also my preference and it was just right. I want to go to the actual store someday.

I had miso ramen (750 yen) and nostalgic soy sauce ramen (750 yen). The parking lot is for 2 cars next to the building and 5 cars 10 meters ahead. I love the atmosphere of an old couple who have returned to the countryside 🤣 The miso ramen has a light soup and is nostalgic. There are also 3 pieces of old-fashioned char siu that are chewy and meaty. Wakame seaweed is also delicious 😋 The noodles are medium thick curly noodles that are crispy and delicious. I had a little nostalgic soy sauce, but the sweet soup with a hint of pepper was delicious😋 Nostalgic but somehow fresh 🙌 Both had a light aftertaste.

I fell in love with our store's bagged raw ramen sold by Nishiyama Seimen, so I finally decided to visit the store. I had predicted that the parking lot would be small, but I was able to park safely, probably because it was a little early on a Saturday afternoon. I entered the store and ordered nostalgic soy sauce and nostalgic salt (my wife) without hesitation. My bowl of noodles, which are harder, arrived first, but it was piping hot so I had to wait a while. When you sip the soup first, you get a nostalgic soy sauce flavor that is light yet deep. Is it natural that the soup stock is more effective than the soy sauce in bag noodles? (I might prefer Nishiyama bag noodles) Although the salty soup is lighter than the bag noodles, it has a dashi stock that makes it difficult to place a high value on it. The mini rice balls served at lunchtime are salty and delicious enough on their own. I think I'll try the ``nostalgic salt'' next time, but both were nostalgic and gentle ramen that lived up to their reputation.
