Ebetsu, Hokkaido, Japan｜Shoryu

A restaurant loved by locals run by a couple, most likely a married couple. The first item on the menu was miso ramen, so I ordered that. Make the soup by frying the ingredients in a frying pan. The special feature is the noodles, which are made using locally produced flour from Ebetsu, which is clearly stated on the facade sign. Instead of the yellow noodles that are common in Hokkaido miso ramen, the noodles are white and have a chewy texture.

The slightly hard noodles have a good flavor, and the soup is well seasoned and very delicious. The char siu is also delicious with a strong meatiness, and the bean sprouts fried in the wok are crispy and a good accent. I am a person who eats a lot, so the large serving was just right. Both the customer service and the couple were smiling and comfortable. The soup was also hot (I wonder if it has been improved?)

The level is too high to be considered a famous local restaurant! It's been a while since I last visited, but I feel like it's been upgraded from before! Personally, I love soy sauce and miso♪ They were delicious! Thank you for the meal!
