A beautiful bowl of clear dried sardine soup. Although it has a retro appearance and an orthodox composition, it has a very rich and modern taste and aroma. I think it has something to do with its location, but it is a shop that is supported by a wide range of people, regardless of age or gender. The store is located a little beyond the north exit of Soshigaya Station and around the main street of Soshigaya Shopping District. There can be a line at lunchtime. The soy sauce Chinese noodles are extremely delicious. You might think of a simple taste due to the dried sardine soup stock and clear appearance, but the taste is very deep and well balanced with the salty taste, making it delicious until the end of the meal. It has a strong umami flavor from dried sardines, but it is not at all addictive and has a roasted aroma. The noodles are straight noodles. It is neatly arranged in a flat colander. The chashu is large. It's moist and soft, probably because it's slowly cooked.
