More Comments at Google MapI traveled out to the north eastern Tokyo suburb of Kira-Senju to seek out Matador Miso, a recommended ramen shop. The shop only seats about 8-9 people at a counter but it produces a great bowl of Gyukotsu, beef bone soup. The sweet white miso paste is mixed into the beef stock, noodles added and topped with vegetables and hand cut char-sui beef. A delicious work of art. A 20’s something woman entered the shop while I was waiting... she ordered and answered her phone. Signs on the counter clearly stated no phone use. The master spoke to her and she took her conversation outside. When her bowl was prepared he called her.... she did not return for another 2 minutes. When she did return he had placed her bowl aside and prepared a whole new bowl for her. This master chef’s work is serious business and timing of the noodle cooking, heat of the soup and crunch of the vegetables are all part of the artistry of the bowl. Impressive!
The rich and fragrant miso soup looks greasy and thick like sesame paste at first glance, but it is actually mild and refreshing, with just the right amount of saltiness. Mix the fried minced beef bones and minced meat into the soup to enhance the overall umami taste and texture. If you drink it with diced tomatoes, it will give you another sweet and sour flavor. Just drinking the soup will make you stop eating one mouthful after another. Don't come down! The chewy wide noodles can absorb the soup and go perfectly with the rich soup! The finishing touches of the pan-fried barbecued pork and tender slices of roast beef made this bowl of noodles shine so brightly!
Unfortunately they don't do miso ramen anymore but the current style is still really good
