Combination of pork, chicken and dashi in the soup. Looks heavy, but it’s not oily or fatty at all. Handmade noodles that are flat, like fettuccine. If you’re hungry, try the Ultra Tsukemen with chashu topping and 1.5 eggs for JPY 1,500. At the time of order, you can indicate 2 or 3 servings of noodles for no additional fee.
What an experience. I chanced upon this shop walking about at 10pm at night, 30 minutes before their closing time, decided to take a leap of faith and entered it. What we found was a small shop with 3 very professional looking chefs, preparing food at the counter. Unfortunately we were not able to read their Japanese menu, but with the help from the chef, we picked what we believed was their signature Tonkotsu Shoyu Ramen. After ordering was when we found out, this ramen shop had won several awards. The ramen was prepared with very precise movements and was served promptly to the table. The broth was thick and rich, it's taste was very heavy. This was countered with the thick ramen noodles that creates a great texture with were able to capture the taste of the soup perfectly. The thick cuts of chashu was amazing. Its outer layer was coated with black pepper creating a unique but extremely satisfying taste and texture. Great ramen great time, I would come back here again if I'm ever in Kyoto!
