I love making ramen 😊 I had the “special chicken salt ramen”. The izakaya...looks like a ramen shop that is only open on Wednesdays, Thursdays, Fridays, and Saturdays during the day...but this year's salt-based soup was My No. 1 in terms of flavor.Soup: The flavor of the chicken was really strong...it was glistening with chicken oil, but it was made with yuzu peel. The flavor is refreshing and Japanese-style... It has a salty taste with just the right amount of salt to make it drinkable. Noodles: Medium-thin straight. Ingredients: Due to the slightly smaller bowl, they are packed tightly together on top of the noodles 😃Thin slices of moist and soft kaiyaki, chunky pieces of kaiyaki, boiled egg instead of boiled egg (maybe it's salted?), Long tips of menma, white onions, finely chopped purple onions, small pieces of raw Chinese cabbage, mitsuba leaves, yuzu peel, and... it looks like a rare chicken fillet, but it's probably seared chicken fillet (I'd be sorry if it wasn't 😅💦, but it was really delicious 😋) If it's tataki...it's the work of an izakaya.👍This shop...looks like it's a small space with a frontage of 1.5 tatami mats and 6 tatami mats x 2 tatami mats, but...they can make such delicious ramen even in this space...I learned a lot... I love the chilled ramen here, I love the chicken salt, I love the shellfish soup stock, I love the mazesoba, and I like it better than the ramen I eat anywhere else. The inside of the store has a counter and small tables that make it difficult to sit down. There is a popular ramen shop next to it, and it has many core fans. It's been a while since I've had it, so I was hesitant to go with the standard chilled ramen with dried sardines and sudachi...but today I had the autumn seasonal chilled ramen with matsutake mushrooms and asari. Of course it's a large serving (2 balls). It has a nice fall scent and is extremely delicious.
