Second visit. The first time, I ordered tsukemen, special light soy sauce, and fried rice, and they were all delicious, so this time I ordered shellfish soup stock and gyoza, and my partner had Kyoto Kujo soy sauce (sorry for the lack of photos), fried rice, and fried chicken. Is the shellfish soup stock salt topped with fried burdock root? It's also fragrant and goes well! I think it's chicken char siu, but that's delicious too... Gyoza was average. The fried rice is flaky and tastes great! I think this fried rice may be the best. The fried chicken is also consistently delicious. My partner's Kyoto Kujo soy sauce green onion was not too spicy, it was soft, and the soy sauce had a slightly sweet taste, which was delicious! This is my favorite ramen shop these days. Tsukemen 400g 1,030 yen and gyoza set 350 yen. Gyoza also comes with fried chicken. The dipping sauce is a mixture of seafood and pork bones with a soy sauce-based sauce, the noodles are whole wheat, straight, medium-thick square noodles, and the ingredients are grilled fatty pork fillet, seaweed, chopped white onions, and fish powder and yuzu peel. The umami and richness of the dipping sauce, the taste and boiledness of the noodles, the chewiness of the noodles, and the finish of the ingredients are perfect, and the overall saltiness and aroma are well-balanced and delicious. Especially the char siu is the most delicious and exquisite so far. The in-store hygiene and corona countermeasures are perfect, and although the price is a little expensive, I can understand it, and the staff are friendly, energetic, and polite. About a month has passed since the opening, but it was a great success with people lining up outside the store as soon as it opened. I visited Menya Takei Kaizuka, a famous store in Joyo, Kyoto, which opened in November 2022. There were about 10 customers ahead of me, and I sat on a bench by the eaves and waited. The turnover was fast and I was able to enter the store in about 10 minutes. On this day, I ordered a large special tsukemen (¥1,350) from the ticket vending machine. I arrived without waiting too long. The special ingredients are 2 pieces of roasted pork roast heated at low temperature, 3 pieces of thick pork ribs, seasoned boiled egg, bamboo shoots, and seaweed. Noodles are square straight whole grain thick noodles. The dipping sauce is a double blend of seafood and pork bones, with soy sauce Kaeshi, yuzu peel, fishmeal, and green onions. The noodles are thick noodles that are springy and chewy. The char siu and seasoned egg are also rich in sauce, so it's a light seasoning, but this is just right. The char siu has a meaty texture and is satisfying to eat. The dipping sauce is a rich dipping sauce made with seafood and pork bones, and if you keep eating it, the yuzu peel at the bottom of the bowl will also be brought to your mouth, making it a little refreshing. The overall balance is good. You can reheat the dipping sauce, and if you ask for soup, they will bring it in a pot. The ratio is 1:1. I thought this was the royal road style of tsukemen!
