𓈒𓏸𓐍 【Wan Chai | hybrid of food culture from French and Chinese triumphed in their Spring menu!】 Nestled in Wanchai, owner & Chef Esther Sham from Maison ES created a cozy French vintage ambiance for wonderful nights, on the journey of whole-heartedly created dining experience. 𓈒𓏸𓐍 ꙳ ⋆ 𓈒𓏸 l’apéritif - Citron A vibrant cocktail with all the citrus elements, and the aroma from grapes and raisins was wonderful to start off the meal! gin, vodka, yuzu sake grapefruit, Sicilian lemon, cucumber ꙳ ⋆ 𓈒𓏸 l'amuse bouche Thousand island dressing with cooked shrimps - a bright and appetising finger food ꙳ ⋆ 𓈒𓏸 Sweet Garlic Razor Clams The savoury salmon roe and caviar elevated the umami and sweetness from the razor clams. It resonated the Cantonese-style of ‘steamed seafood garlic glass noodles’’, with a twist by caramelised garlic puree and soy foam. ꙳ ⋆ 𓈒𓏸 Crispy Langoustine Wonton This is a dish to remember! It echoed the flavours from Shanghaiese “Xiao Long-Bao’, with succulent chunks of langoustines, encapsulated in that golden brown crispy deep-fried wonton. The reduced hairy crab roe added that unique depth to the flavours. ꙳ ⋆ 𓈒𓏸 Crispy Grouper The potato nitro-mousse really sets off the soft steamed grouper! The silky smooth texture of the mousse matches well with the moist flaky fish, with an interesting contrast with the crispy skin. The savoury Chinese sausage really brought the dish to the next level, which was totally unexpected! Drizzles of Sichuan peppercorn oil gave extra and mellow spice which is so unforgettable. ꙳ ⋆ 𓈒𓏸 Chu Hou-Beef Filo Pastry & Steak The crispy filo pastry rolled up the herbs and spices of Chu Hou sauce, fully infused to the beef. Perfectly seared A3 wagyu and charred kale matches nicely with the dish. ꙳ ⋆ 𓈒𓏸 Cherry Chocolate Pebble Chocolatey dessert is irresistible! Classical pairing with cherries, and the surprising match with the pu’er sponge and ice cream tastes amazing as the finale. ꙳ ⋆ 𓈒𓏸 Petit fours
We like the food there! Though it is on the expensive side, everything we tasted was delicious. (We ordered a brunch for 2 on Saturday, and it cost us slightly above 1000.) The service is good and the staff was helpful. Glad we chose here and will come back.
