2023-10 I used it for the first time in a while for lunch on a weekday. This time I bought "Red Miso Normal 870 yen" from the ticket vending machine. 870 yen? The price has dropped, but half of the flavored eggs that come with it by default are gone, and the char siu has been further downgraded. The char siu has become quite small and is mostly fatty, which is kind of sad. Maybe it's better not to have this at all... The noodles and soup are delicious as always... It's such a shame because until last year, it was a very satisfying ramen that was about the same price and had a ridiculously big, low-fat char siu and half a seasoned egg on top (pictured above). I think they are trying their best to come up with various ideas as prices are soaring, but if this is the case, there may be fewer opportunities to use them in the future. The partition panel that separated the counter seats from the kitchen until last time is gone, so you can see the kitchen clearly. Maybe the new coronavirus caused the reduction in category 5 and the removal of partitions. There are no more signs asking people to eat silently and wear masks, so it feels much cleaner. I think the atmosphere has improved a lot because the inside of the restaurant looks spacious, doesn't feel oppressive, and you can see the food being prepared. White miso ramen is consistently delicious. Char siu too... huh? Last time I was impressed with how big the char siu was, but this time it was a bit smaller. It's about half the area compared to the previous photo. There are a lot of fatty parts, which is a bit, no, quite disappointing. This restaurant's signature menu is miso ramen, and I think it's been about 10 years since it opened. I remember going there a few times when it first opened, but as I got older I started to avoid strong-flavored ramen, and before I knew it, I hadn't eaten there in years. However, I saw a review online saying that the taste has changed a lot since it opened and it has become even more delicious, so I went there for a weekday lunch for the first time in a few years. I think the nearest station is Magomezawa on the Tobu Urban Park Line, but it's a bit far if you walk. Access by car is convenient as more than 10 cars can be parked on the premises. I arrived around 11:40 and there was one car and one other customer. There is a ticket vending machine right after entering the sliding door entrance. Since I had already forgotten what I had eaten in the past, I clicked on the ``White Miso Ramen 900 yen'' button on the top left of the ramen menu, which seemed to be my favorite. As soon as I bought my meal ticket, the woman in charge of the restaurant (perhaps the owner's wife) took the ticket and asked me if I wanted noodles or soup. You can choose between thick or thin noodles, and the thick noodles seem to go well with miso. I didn't know much about the rest, so I asked for everything to be normal. There was a container of garlic and ginger on the counter near the entrance, so I grabbed some ginger and sat down at an empty counter seat. There are about 8 chairs at the L-shaped counter inside the store. It's divided by clear panels, and there don't seem to be any table seats. The kitchen is located inside the counter, but there is a partition at eye level, so you can't see much of what's going on inside, which is a bit of a shame. Serving time is quick, about 5 minutes. It looks quite filling and luxurious with a heaping amount of vegetables and a large chashu pork. As soon as I slurped the soup, I realized, oh, this is so delicious. The miso has a good richness, and the balance with the animal-based soup is very good. The noodles are slightly yellow and wavy, with a smooth and chewy texture that goes well with the miso soup. The vegetables are so plentiful that they would be paid toppings at a normal ramen restaurant, and I think they are bean sprouts, onions, and cabbage, and the crunchy texture is very delicious. The chashu is a shoulder roast with less fat (probably), which is also my preference. The half-flavored egg that comes with it by default has a creamy yolk and is delicious. If this is the case, you might want to add one more topping. Is the black color the chopped wood ear mushroom? This is also a nice accent. The noodles, soup, and toppings are all delicious and I have nothing to say. I wasn't able to finish the soup because I was avoiding salt, but I'm sure I would have finished it if I was younger. Personally, I think it would be better if it had a lighter flavor, so next time I have a chance to eat it, I'll ask for a lighter flavor. When I came here for the first time in a while, the miso ramen was of very high quality.
