When you put the soup in your mouth, the scent of pork bones gently passes through your nose. It doesn't have a flashy taste, so I think it's more like the pork bone ramen of old-fashioned stalls and local restaurants than Kurume ramen that is generally imaged, and in a sense it's an authentic taste. For those who were born and raised in the Kanto region, this is traditional Chinese soba. This flavor of tonkotsu ramen is unique in the Kanto region. Recently, the number of delicious tonkotsu ramen shops has increased nationwide, but I personally feel that the taste is too flashy. In this day and age, I am filled with gratitude and excitement to be able to enjoy tonkotsu ramen with such a deep flavor in Tokyo. The gyoza dumplings with coarse cabbage are also full of handmade feeling, and the grilling is exquisite and delicious.
