Shiki, Saitama, Japan｜本格四川中華BAR 陳麻婆豆腐Maejima

Some of the best mapo tofu that I've had in Japan crafted by a local Shiki guy who supposedly worked as head chef in a Michelin-starred restaurant before deciding to open his own place back in his hometown. For 700 yen, you can get a large plate of made-to-order spicy goodness that not only allows you to customize the heat (from level 0 to 5), but also lets you tweak the amount of the tongue-numbing spice that makes this dish so great. For an extra 200 yen, they'll increase the amount of tofu you get by about 50%. The first bowl of rice (at lunch) is free and refills are 50 yen. We also ordered some dumplings that were 700 yen for 6, and absolutely full of scrumptious, savory broth. As this is a mapo tofu specialty shop, you won't find much else on the menu besides 1 type of noodle dish and several chicken sides, but everything (besides the bottle of 30 year old Chinese liquor for 30,000 yen) is basically under 1000 yen. Highly recommended!

I visited [maejima] near Shiki Station in Shiki, Saitama Prefecture. When I was looking for it near Shiki station, I heard that you can eat Sichuan mapo tofu. I visited by car, but there was a parking lot near the store, so I parked there. A quick google will find the location. I entered the store immediately. There was only one customer inside. I was guided to a table seat in the back. When I looked at the menu, I was worried about whether I would be able to eat mapo tofu because I always needed an appetizer and there were two items. Also, you have to ask for alcohol. Be careful here. I ordered regular size mapo tofu and shrimp chili. Rice is normal size. The Tenshin platter and drooling chicken that came out in the appetizer are really delicious. A level that can not be thought of as an appetizer. For mapo tofu, you can choose spiciness or numbness. I set both to 2 this time. Normal seems to be 3. However, Sichuan is originally spicy, so I was scared and made it 2. The mapo tofu was a little unsatisfactory with a spiciness of 2, but the numbness could have been 1 instead of 2. Shrimp chili is very big shrimp. It's sweet, but there's a spiciness deep down. All of them are regular size, but the amount is very large. You can also take away. Also, I am grateful for the kindness of the store staff. First of all, it tastes really good.
