A short walk from Nishi-Tokorozawa Station, there is a quiet soba restaurant. I am attracted to it and try to enter. The inside of the shop is so beautiful and clean that it's hard to believe that it's been more than ten years. There are counter seats lined with 1.8 liter bottles and table seats with a floor heating. I ordered duck soba and grated bukkake. You can feel the owner's commitment and delicacy not only in the soba, but also in the presentation. The clerk who served us was also polite. This soba is so thin that it is so thin, but it has a firm texture. It is delicious even if you eat it raw without adding anything. Unfortunately, it closed recently, but it is similar to the soba of Rishoan, which I thought was the best in Ashikaga city, which is famous for soba. When I listened to the stories of the owner and the customers at the counter, I learned that they change the salt content of the soup depending on whether it is hot or cold. They talked about things like, "It's done," and "I want to hear more." Indeed, you can feel the owner's personality in both the taste and appearance. From 6:00 p.m., it seems that sake and appetizers will also start. Next time, if the owner is not busy, I would definitely like to drink at the counter while talking.
