Stretch your legs to the Shin-Koenji area and enjoy noodles at Nodoguro Ramen Nagaya 👊 I didn't know the store was in the basement and was looking around when the general came up the stairs lol I took a seat at a bar counter-style chair in the store, which seemed to be a separate business for lunch and dinner, and looked at the menu. Oh, before I knew it, I was reflected in the mirror right in front of me lol Show your face once in a while ✨️ The letters on the menu were so small that I couldn't really see anything, but I went for the Ajitama Soy Sauce Ramen. When I entered the store, there were no customers in front of me, but when I realized there were only 5 customers after me. It's a popular store as expected♪ The rice bowl was served in about 10 minutes while watching the chef's actions right in front of me. You can tell it’s delicious just by looking at it✨️ This is a completely confirmed project with NK style (No-Water: no need for water)👊 Now it's time to eat... It's a bar at night, but during the day it's a ramen shop that operates out of a space. I think it's tough because it's a one-off operation, and I think the ventilation isn't good in the basement, but I think it's still delicious and I want to support the owner. The soup is rich and has a richness and flavor that makes you feel like it's from the throat. I think the ramen is delicious and reasonably priced. In fact, I felt that the salt ramen alone would be cheaper if you took into account the ingredients of Nodoguro. If you are interested, I highly recommend that you taste it with your own tongue at least once and judge it based on your own tastes. I think it was delicious ^_^

Mid-September 2023 Weekdays Flavored Salt Ramen 950 yen I visited this place that I was interested in. The store is located on the basement floor of a building right next to Shin-Koenji Station. At the bottom of the stairs, there is a lantern that says ``Noodles'' and a sign that says ``Tastes from 100 Famous Stores.'' The owner seems to be from Katsumoto. I wonder if the shop operates out of a rented bar. The lighting inside the store is dark and there are 12 seats at the counter. The shop owner, a fearless man with a shaved head, runs the restaurant by himself. When I visited around 12:30, there were 4 customers before me and 4 customers after me. There are three types of noodles on the menu: salt, soy sauce, and seasoned noodles. Order the first item on the menu, the seaweed, with a flavored egg. Payment must be made in advance. A bowl of rice appeared soon after. The soup is pure water and salt made with Nodoguro soup stock. The deep, thick flavor of the throat black and the flavored oil combine to create a very appealing flavor. I can't help but move the astragalus back and forth. According to the Instagram account, ``We use purified water, dried bonito flakes, dried mackerel, Rausu kelp, Hanadonko Shiitake mushrooms, and black throat black from Shimane prefecture, and take our time to bring out the maximum flavor. A mellow, additive-free soup." The noodles are thin straight noodles. It has a nice crunch and goes well with soup. Ingredients are chashu, flavored egg, menma, and green onion. The char siu is probably pork shoulder loin, and the finish is similar to low-temperature cooking, and the meat has a good flavor. The flavored eggs are average with a light seasoning. Origami-cut white onions have a great texture. Sakut complete meal. Finished with a little bit of soup left. I was very satisfied with the dark black ramen with its deep and thick flavor. It was a feast.
