Arrived at 12:20 on Monday, May 2, 2022, there was no waiting, and only one seat at the counter was vacant. I bought a ticket for soy sauce ramen (700 yen) at the ticket vending machine on the right side of the store. At 12:24, I arrived at the counter seat and handed the meal ticket to the owner, who confirmed the amount of noodles (free of charge) and ordered "normal". At 12:29, soy sauce ramen was served. It's a one-off operation by the owner, but I'm interested in how skillful he is, such as cleaning up the dishes after eating and serving the food with water in a cup. The soup has a refreshing taste with the umami of soy sauce and dashi, and the scent of yuzu. The noodles are straight, thin noodles that are boiled to just the right firmness. As for the amount of noodles, I'm not a big eater, but I think it's a normal and satisfying amount for an average adult. Ingredients are 1 piece of crispy chashu with little fat, chopped green onion, mitsuba, 1 sheet of seaweed, 2 Chinese bamboo sticks with little streaks, and 2 pieces of deep-fried tofu. At 12:38, I finished eating. It was a delicious soy sauce ramen with a combination of soup and noodles that exceeded my expectations. Thank you very much for your meal.
