I ordered ramen (medium) medium thick noodles. The sign outside says, ``We are Tsubaki-style ramen.'' Although the name of the restaurant is not a ramen shop, it probably means that the restaurant uses seasonings from Tsubaki Shokudo, which is said to be the headquarters of ramen shops. The soup is made with tonkotsu soy sauce, has a light fat, and has just the right amount of salt. It said "medium thick noodles are available" so I chose it. It has a firm texture and curls well, and I prefer it to medium-thin noodles. Ingredients are grilled pork, wooden ears, bean sprouts, and seaweed. I agree with not adding seaweed, which changes the entire flavor. I've always disliked the flat bowls at ramen shops (the soup gets cold easily, it's difficult to scoop with the spoon, and you can't touch the rim to drink the soup), but this one has a smaller spoon and is designed to make it easier to drink the soup at the end. . Above all, the beautiful young landlady's gentle voice is very comforting. The owner seems to be kind, and it's a rare restaurant where you can eat with a warm feeling.
