Hachioji, Tokyo, Japan｜中華そば つけ麺 音七

Simply amazing Hachioji style ramen. The tsukemen is fantastic. A rich soy sauce broth with a great douse of fragrant oils to really hammer the flavour profile home. One thing this shop does right, which I think more shops should do, is that bits of chashu were grinded into the soup, creating a wonderful flavour as you slurp up the noodles and the right amounts of chashu bits and onions get trapped within and into your mouth. Will definitely go back for more. Highly recommended.
