Niiza, Saitama, Japan｜Chūka-soba Aoba Equia Shiki

“Chinese Soba Aoba” is a ramen shop located in Equa at Shiki Station. Depending on the day of the week and time of day, it felt like there was a queue outside the shop. The menu is quite simple, only ``Chinese soba'' and ``Tsukemen'', and there are no toppings, which is quite unusual for a ramen shop these days. I had a feeling The soup is mainly seafood, and it feels rather light. I ordered a special tsukemen, but is it common? When making tsukemen, most people drink the soup with hot water after the noodles run out, but in the case of Aoba, the soup is rather light, so I drank the entire soup without adding any hot water. I stopped by for lunch on Sunday. I usually go to Iekei Ramen Musashiya, but I got carried away and there was no line at this shop on weekday nights, but there was a line on holidays. The seafood soup was delicious. They also have tsukemen, so I'd like to try it next time.

Simple egg noodles in a light soup. You might think you'd get tired of it quickly, but the soup is rich and you can change the taste with yuzu and pepper, so you won't get tired of it.
