It features distinctive, thick, and chewy noodles, complemented by a broth enriched with fat, coarsely chopped onions, seaweed, and dried sardine dashi, resulting in an incredible flavor combination. The soup contains a substantial amount of fat that, when scooped up, harmonizes perfectly with the onions, creating a subtly sweet and delightful taste without an overwhelming oily sensation. Customers have the option to choose their preferred amount of fat. After savoring the soup, you'll experience a genuine fondness for the fat and dried sardines, and even the seaweed and bamboo shoot are exceptional. What sets this place apart is their unique gyoza served with ginger vinegar, a rarity compared to the common soy sauce dip. I will visit this place again and again.
