More Comments at Google MapMarch, 2023 One of the most delightful meals we had in Tokyo was surprisingly affordable, and it happened at a salmon ramen specialty store we stumbled upon in Kagurazaka. With 14 years of French cuisine expertise, the store's commitment to quality and sustainability was evident in their use of first-class salmon, carefully selected from a domestic forest farm and utilizing the whole fish from head to bone. The salmon ramen soup we ordered was outstanding, featuring a full-fledged espuma that utilized nitrous oxide to create a mousse-like texture and bring out the elegant taste of French cuisine. Additionally, the use of a cutting-edge molecular cooker, Dr. Fry, ensured the salmon was cooked to perfection, resulting in a healthy dish with less oil and plenty of moisture. It is, indeed, a unique and exciting fusion of Japanese and French flavors presented in a casual and enjoyable ramen experience.
Decided to try this place after I had passed by it multiple times. As soon as you go in, there is a ticket machine where you select your bowl and any toppings you want. A nice man greeted me and helped guide me through the buttons (my kanji reading is not up to par yet 😭), which was very nice. My ramen (the porcini salmon bowl) was so rich and tasty, I finished the whole bowl. I had never eaten ramen with salmon before and it was great. I wish I could have eaten more, but I was so full lol. This restaurant is the only restaurant I’ve been to in Japan where the waiters checked on me a few times during my meal, which surprised me because I wasn’t expecting it. I think they may have been genuinely curious as to what their customers think about the ramen though. As a foreigner who is usually nervous about not being able to communicate very well in restaurants, this place was not bad at all because at least one of the waiters was able to speak some English, and helped other foreigners who came in behind me as well. Definitely give this place a try if you find yourself nearby.
Great fusion salmon ramen, very thick, creamy and delicious broth. The noodle is more like pasta, very interesting combination.
