This is Kitakata Ramen's Tanaka Soba branch. I arrived at the store at 7:00pm after work and it was full. You can buy Niku Soba 1250 at the ticket vending machine and get a seat right away because the rotation is fast. As soon as I passed the counter, the rice bowl was served, and as expected, it was a business building, so it seemed like they had started cooking based on the trends of the previous customers. During this time, we were told that we would be offering a free large serving of flavored eggs, so I ordered a large serving and my companion had an extra flavored egg as an additional topping. First of all, the portion is beautiful. The bowl is filled with rose char siu, arranged like flower petals, and stands out against the clear salty soup. A classic combination of medium-sized curly noodles, menma, green onions, and Kitakata ramen. The noodles are chewy with a high water content, slippery, soft on the outside and firm and chewy, making them delicious. The soup is salty and the noodles are a perfect match for the char siu. The flavor changes with the incense chili peppers provided at the table. The spiciness has been added and it feels even richer. Even though it was a large portion, I didn't get tired of it until the end and finished eating it. It's a tenant in a commercial building, but it's delicious.
The secret to the high degree of transparency is the tonkotsu soup, which is cooked so that it does not become cloudy. Flat curly noodles that are narrower than Sakauchi. Niku soba topped with plenty of pork belly chashu is a masterpiece.
