Shin-Koiwa Ibuki is a ramen specialty restaurant located along Heiwa Dori, about 500 meters away from the nearest station, JR Shin-Koiwa Station. You can enjoy ramen based on dried sardines. This time, on my first visit, I had "Ibuki Soba". There are small, medium, and large sizes, and this time I chose the large one for 1,080 yen. The noodles are special from Kanno Seimenjo and are thin and straight. Personally, I think noodles with a firmer texture would be better for a soup that is less salty but has a slightly thick texture. Still, it was a high quality ramen.
