I was able to sit at the counter at 13:00 on Sunday. Seiro order. Nihachi's hand-made soba has a strong aroma, is cold, and has the best texture! Perfectly boiled and carefully tightened. It's always delicious. The koikuchi tsuyu goes well with it, and adding sobayu at the end brings out the umami of the broth. The buckwheat noodles that accompany the tea are so sweet that you can cool off in the calm atmosphere of the restaurant. Expensive but everything is good quality. It can be used not only for everyday use, but also for special dinners.
I had the plate soba, which is only available on weekdays. The hard-boiled noodles, which have the feel of extra-thick country soba noodles, sit on a long thin colander-like colander, and the spicy soup is completely to my liking. I'm happy to have plenty of soba-yu, which seems to have rutin in it. Just because it's a soba restaurant where people line up from noon, you can expect a lot, and I don't think you'll be disappointed. I will definitely come back to try other menu items.
