Changhua City, Changhua County｜西安飯莊

I went with my American husband tonight and we ordered a stewed pork with potatoes with a side of white rice. The pork was stewed perfectly, not overly soft but soft enough to bite through the ligaments and soft bones. We also had a minced pork noodle, wonton, and preserved egg. The flavor profile of each dish consists of a mixture of sour, savory, spicy, and a touch of sweetness (mainly in the wonton sauce). I wonder if the chef toned down the aromatic spices in the sauces to suit the Taiwanese palate. I've been to Shanxi and Sichuan, and the flavor and spices there are much more pronounced, which I liked a lot. I remembered having the best black vinegar in Shanxi. Nonetheless, the chef takes great care in his cooking to suit the customers preference. I will visit again to try other dishes.

The taste is delicious, the side dish green pepper preserved egg is sweet and sour and delicious!
