White miso wild boar hotpot. Unlike normal hotpot, you wouldn't taste the greasiness of the wild boar fat towards the end of the meal. it's appetising and fresh. They will serve rice, mix the rice with the soup and tomato puree, it's like risotto 😋
Easily one of the best meals I've had in recent memory. We were able to catch the end of the botan nabe (boar) season, which is only available seasonally around winter. The ambiance is extremely pleasant, with a beautiful garden in the middle of the establishment and each dining area a private tatami room centered around a fire pit. Like many traditional establishments in Japan, you must remove your shoes upon entry and are supplied slippers for use while you are there, and seating consists of cushions on the mats. There was no menu to order from. They have a specialty and stick to it and it didn't disappoint. Unlike my previous hot pot experiences which were largely DIY, our hostess did much of the cooking to ensure that each item was cooked appropriately. The meal comes in stages as different things are added to the pot, slowly altering the flavor profile of the broth, culminating into some of the finest rice porridge you can imagine made from the leftover broth after all the stewed items are eaten. The entire experience is extremely well thought-out and category planned. Reservations recommended. I would go back again in an instant.
