It was my first time to make thin eel. According to the owner, the fine bones of the eel are carefully removed one by one, boiled once to remove the smell, and then thinly sliced ​​like puffer fish. As for the taste, this is a delicacy worth eating. There is no odor at all, and it has a surprisingly crispy texture and a slightly fatty feeling. This was a dish that could be eaten as an independent dish. The eel on rice is not as thick as a famous restaurant in Kanto, but it is just the right thickness, and above all, it is wonderfully grilled. This may be the "craftsmanship". While maintaining a plumpness comparable to Kanto steamed eel, the crispy surface brings out the deliciousness of the eel. The rice is evenly mixed so that the sauce doesn't accumulate underneath, so you can enjoy the rice and eel as a set with a consistent taste. This trick is also interesting. ■ Service and Atmosphere It feels like a family run business and has a homey feel. The master's polite technique and explanation were very nice.
