I had ramen for the first time in Tamba Sasayama City. I arrived at the parking lot before opening time, and after a short wait, the store changed from "under preparation" to "open for business," so I entered the store. When I checked the menu after entering the restaurant, I thought that I must try the soy sauce-based ramen, so I ordered a large serving of ``ramen'' (soy sauce). There was also a delicious-looking ``Mazesoba'' on the menu. There was also a menu on the table and a handwritten menu posted on the wall. You'll want to try them all, including ``pepper mixed soba'' and ``curry mixed soba.'' While I was looking at the menu and waiting, the ramen arrived and it looked beautifully presented. When I took a bite of the soup, it was ``light'' and gave me the impression of ``Banshu Ramen,'' but it was something completely different. If you eat it with noodles, it will mix with the soup and double the flavor. As for the noodles, there are bags of flour stacked next to the entrance, so I felt that the noodles were carefully made in-house. The chashu is made in the style of roast pork, so it was light and had a satisfying thickness. I ate dried sardines ramen at a different ramen shop, but the taste of the dried sardines was so strong that it was hard to eat. The ``Niboshi Ramen'' here makes use of the flavor of dried sardines, making it easy to eat. I'm curious about the ``Tsukemen'' and ``Mazesoba'' served in the evening, as well as the ``side menu,'' but I think you'll be able to enjoy the meal no matter which menu you choose. I'm looking forward to the next time I can go. It was a feast.

I had lunch here yesterday. I arrived before the opening time and entered, but there was a line outside the store immediately. I had a large serving of dried sardines and soy sauce ramen. The noodles seemed to be blended with whole grains, and had a good texture, and the soup was very delicious.

This store is near the Tannan Sasayamaguchi Interchange. There is a shared parking lot for the facility. The regular menu includes ramen, dried sardines ramen, mazesoba, and tsukemen, and there are occasional limited menu items. The seasonings on the table are interesting: ``pepper oil'' and ``dried sardine vinegar.'' It's a seasoning with a strong personality, so it's probably good to try it a little. The soup tastes delicate and elegant. ``Niboshi Ramen'' is a very delicious soup with a good soup stock. Even if you make a mistake, you can rest assured that you won't have added dried sardines powder. (2018/09)
