I personally have the most delicious katsudon in the katsudon world. The cutlet bowl is crispy because the cutlet is not stewed. However, the egg is soaked in the dashi stock, so it's crispy, but the flavor is soaked in and it's irresistible.
Takashima-san has been operating in Ichijoji for a long time. I had the famous katsudon. The cutlet is a thick piece of pork spread over a bowl of rice without any gaps, and covered with a runny egg. Personally, it was a striking cutlet bowl where the crispy parts of the cutlet coexisted with the soft parts that had been cooked. The flavor is mildly soy sauce-like, and you can really feel the flavor of the soup stock. Isn't 800 yen with red soup stock and pickles cheap? There are things that make it worthy of being called a specialty. It's easy to see why it's loved by locals.
