I could tell that the makers were very particular about their products, not just by looking at them, but also by tasting them. He makes soba and udon every day, and doesn't make them in advance. (After ordering, I heard a "don, don" sound from the back of the store.) Being able to eat freshly made soba is a rare experience in life. I ordered Mori Soba. The soba noodles on the colander have been thoroughly drained (perhaps in consideration of not diluting the taste of the soba soup?), and there is no water collecting under the colander. Additionally, if you pick up the soba with chopsticks, it won't stick together and form clumps, and you can put only the amount you pick into the soba choko. The soba noodles had just the right amount of firmness and you could really taste the soba flavor. The soup has a fluffy fishy scent. And it's delicious. The grated wasabi condiment is also delicious. It can be eaten as is. The vegetable tempura was also delicious. It may seem like a long time from when you order until it's served, but if you can enjoy soba made with so much attention to detail, it won't be a problem at all. In fact, waiting made it taste even better.
Don't be fooled by appearances. You can eat very delicious soba noodles. The grilled duck is also very delicious. If it were a little closer, I could go further.
