It seems like the hormones are recommended, but this time I had the liver set meal. It had a light taste but was very delicious. Business hours are short from 11:00 to 13:00, and closed on Sundays. I don't have many opportunities to go there, but I would like to try the entire menu.

Six years ago, the shop owner became seriously ill and had to close, and the shop remained closed for many years. I've wanted to go since I found a post online earlier this year and found out they were reopening. Ever since I ate the hormones from this place, the taste had been recorded in my brain, but it had begun to fade over the course of six years. Since returning to Tokyo, I have eaten various types of offal, but the only meat that exceeds the quality of this restaurant is the offal from Staminaen in Shikahama. Today was my first time in 6 years, so I decided to visit when the store opened at 11am. I was relieved to see both the owner and his wife looking happy. It's not that the walls inside the store are old, but that they have a long history and age. The tables and chairs also carry the history of the times, and have grown over the years together with the owner and his wife. Families always order the ``hormone grill,'' and young people also order a large bowl of rice from the ``hormone set meal.'' After all, locals also order the hormones here! They used to use branded pork that was fed yogurt, but now they are using hormones from a butcher because they can't go to buy it, so they are adjusting the simmering time. In the past, I came by car so I couldn't drink beer, but today I'm on the train, so I order a bottled beer. It was my first time drinking beer at this restaurant. After a while, the owner brought the food and set it on the table, and my mouth was full of saliva! First up is the ``Grilled Hormones'' for 550 yen, which looks delicious as it gets browned on a heated iron plate! When you take a bite, the meat juice spreads in your mouth along with the miso-based aroma, and the tender meat melts with flavor. Unlike commercially available hormone gum that you can't chew, the meat is amazing because it melts when you bite into it! Next, I will eat the "Vinegar Pickles" that I ordered for 650 yen! This is pickled guts, and there's quite a bit of it in a bowl. The flavor of the soy sauce is deep and the slightly spicy flavor is perfect for pairing with beer. When you eat it, there is no pork smell, and you can enjoy the flavor of pork with just the right amount of fat, and the crunchy texture. As I continued to eat, old memories came back to me. Next came the ``stew 450 yen''. It is served in a bowl, topped with green onions and topped with white sesame seeds. When you take a bite, the well-cooked offal melts in your mouth and disappears. I don't know how long it was simmered, but it was very delicious. Next is the 550 yen Ramen, which is my first time eating at this restaurant. It's a simple soup with pork bone soup and soy sauce soup stock made with chashu pork. The noodles were straight, thin noodles, and ordinary, but the flavor made with Mt. Fuji spring water was very delicious. When I die, I will say, ``I wanted to eat the offal from Kato Shokudo.'' The meat is not like gum that you can't chew, but the offal is soft and chewable in your mouth, and you won't be able to eat it anywhere else! This is a restaurant with an old-fashioned, laid-back atmosphere. If you like grilled hormones, you'll love this. The noodles and seasoning of the ramen were average, but the chashu garnish was exquisite. All the meat dishes looked delicious.
