The noodles are chewy. According to the proprietress, they use noodles that look like non-fried noodles. It's not a normal yakisoba noodle, but rather a chewy noodle that's more like ramen, and it's wonderful. I topped it with squid and pork, but I think it would have been better with just the egg. The sauce is not too sweet, so if you're hungry, you'll want rice. The soup is a little sparse, so if you like it sticky, you can add the sauce at the table yourself. It was delicious.
