Seki, Gifu, Japan｜そば輝

I’ve eaten at most of the best rated sobas in Tokyo and Yamagata, but the soba prepared at this restaurant was quite amazing as I did not have high expectations. The soba is made from 100% soba flour that was very white in color, meaning, the shells of the soba are not used in the mix, therefore very high quality, and it was very thin and chewy. the dipping sauce has a very balanced taste of soy, and dashi from bonito and kelp. The tempura was also a joy! Overall if you ever are visiting this area of japan, please come and visit this soba restaurant.
