There is also a traditional udon restaurant in Yamagata City, soba and katsudon. Today, I ordered the summer-only Hiyashi Chuka. The noodles are whitish and more like fresh pasta than Chinese noodles. Masuyo ♫ I'm happy that cold tea is served instead of water.

A traditional udon, soba, and rice bowl shop. I ordered chilled kitsune and chilled tanuki. They were both delicious. There aren't many places to eat in Yamagata City, so these long-established restaurants are valuable. Gifu's soul food, no doubt.

Katsudon and fox udon were both delicious.
