I think he was talking about the nuance of serving the food right in front of the customer and observing and listening to their reactions while interacting with the customer to ensure that the food does not become self-satisfying. It's been a year and a half since we opened. I was finally able to ask. First visit was for lunch. I was able to add a meat dish to the 2,500 yen course for an additional 500 yen to make it a full course. Although it was a one-time surgery, I had the impression that everything was done with care. The food and customer service were wonderful. I went there with high expectations, and I was not disappointed at all. Everything was delicious, especially the fish dishes!
