This is the second time I have asked. I rarely go to Gifu for work, but I was finally able to visit the second time because it was a holiday. Since I visited shortly after the store opened, even after more than a year, the store was quite clean. I had a delicious Hisui Ramen this time as well. It's pork bone ramen, but when you put the soup in your mouth, it's refreshing and doesn't have a persistent aftertaste. What I can say about anything is that you can understand what is made carefully without explanation. After eating ramen at other stores, the taste is strong and sometimes I get thirsty, but I don't have that feeling. If you order the weekday lunch set, it comes with a mini grilled pork bowl and a piece of fried chicken. The fried chicken was freshly fried and very juicy and delicious. I normally drink a lot of water, so when the store brought me a new one right after my pitcher ran out, I thought it was amazing how attentive they were. It's an adult-like restaurant, so it may not be suitable for people with small children.

The shop is new and is more of a cafe than a ramen shop. The store looks like this! When you enter the store, it's even more beautiful. The ramen is made with Bono pork, and has a light soup that doesn't have the distinctive smell of pork bones, and straight thin noodles! The char siew uses Bono pork, and the right amount of fat combines with the soup to add richness. It was an elegant pork bone ramen with added aroma from the charred flavored oil. Repeat confirmed 👍 The fried chicken was also my favorite, with a crispy batter and garlic.

I stopped by on a business trip. I ate the ramen with clear soup. This soup is even more refreshing than it looks. The narrow, curly surface accentuates the freshness. Charyaki is a thinner type of oil that melts in your mouth. It was the most delicious Charyaki I've had in a while. There were several other types of ramen as well. The shop has a nice appearance, like a Japanese sweets shop. Highly recommended for those passing through the Kamiasabu area on National Route 41.
