Iiyama, Nagano, Japan｜そば処 石田屋一徹

I heard that there is a soba unique to Iiyama City called Bokuchi Soba, so I came here. When I first heard about the crater, I thought it was made from mugwort (which also serves as the crater when starting a fire), but here it seems to be a kind of pokeweed. So I waited while playing at the Togari Onsen ski resort next door, and rushed to the store when it opened and ordered kake soba. And hot sake... Kake soba appears when you feel better while enjoying hot sake. I'm happy to see red and white namasu, burdock kinpira, and nozawana greens served with sake little by little, but first, I slurp the kake soba. Well organized. Tsuyu is moderate. The soba noodles are not crumbly. The scent is also great. delicious. Suddenly, I noticed that the soba soup had become cloudy. Is the soba starting to melt? Maybe it's different from connecting with wheat, anyway, when I slurp the soba again, the texture is surprisingly slippery and unique. The soba soup had just the right amount of sweetness to match the sweetness of the buckwheat flour, resulting in a soba soup with a unique aroma and sweetness. I think this is delicious. Perhaps my interest was piqued, I ordered a piece of zaru soba next time. This time, the tether is effective and long. It was so bad that I had to cut off the soba at the edge of the soba choko while I was handling it. When you slurp your soba noodles, the cold water of Nagano is delicious, and after that you can smell the fragrance of the soba noodles. It's also delicious. But I like kakesoba the most. You can't experience this anywhere else.

I had a large bowl of zaru soba for my ski lunch. I was able to enjoy the original taste of Shinshu soba. I think it's about a 3 minute walk from the ski resort. I think this is the best place to have lunch for those who are not satisfied with the gelatin food.
