Tokamachi, Niigata, Japan｜Nishino

A paean to the soufflé-like tamagoyaki at Tokamachi’s にし乃 (Nishino), the best to cross my lips thus far, along with succulent fish cakes, sweet/salty tebasaki, hegisoba w/ the perfect bite, crisp flavorful tempura, and a respectable agedashi dofu (still worlds better than most or perhaps all in NYC). Tremendous meal for $19 equivalent per person (no tipping in Japan either folks)

AMAZING! Everything was delicious and the service was so friendly. Absolute recommendation. 7 min from the station with a wide menu that covers not only soba but delicious salads, pizza, tempura, etc

I ate tempura soba. It's smooth and chewy, so you can eat as much as you want. The inside of the store is stylish with jazz music playing. At night, we could drink alcohol, which was nice. Next time I'll stay the night. Everyone at the store is kind and polite, and I highly recommend them.
