The soup is Nagaoka ginger soy sauce based. The ginger makes it refreshing, but the soup has a mild flavor and sweetness. The noodles are medium-thin curly noodles with a chewy texture. It's been a while since I ate it, but it was still delicious. This is not a shop for tourists, but a famous Nagaoka ginger soy sauce ramen shop that is only known to those in the know.
