2023.9.10 Today at noon, my long-cherished wish came true and I visited our store for the first time with my wife, which I had been interested in for a while. Our restaurant is small in size, but has a reputation for serving authentic and delicious pasta and pizza. When I opened the sliding door, I saw three customers and two others coming in for a Sunday lunch. We sat at a table by the road, and I ordered pasta with shrimp and crab in tomato sauce, and my wife ordered pasta with soft-boiled egg and cheese in meat sauce. I ordered the plum and chirimenjako pizza to share separately. A set salad and soup came out soon, and while I was eating them slowly, each pasta arrived and I ate them slowly. …umm. Delicious. The tomato pasta with shrimp and crab has a nice seafood flavor and is perfectly cooked to the point where it cuts crisply when you bite into it with your front teeth. The tomato sauce had a relatively strong acidity, was probably made by the owner of the restaurant this morning from fresh tomatoes, and had an excellent sharpness. I got some of my wife's meat sauce and tried it out, and the sharp tomato sauce brought out the flavor of the ground meat and gave it a deep flavor. In this pizza with plums and mushrooms, the sourness of the plums and the roundness of the cheese conflict with each other, but they harmonize perfectly, and the chopped green onions and mushrooms work well together, creating a light Japanese-style flavor. This exquisite crust, which is thin yet satisfying to eat, is the perfect complement to them. It has an amazing depth of flavor. If you look at the grand menu on the table, you'll see that there are many pastas you'll want to try and pizzas that are worth trying.
