Minano, Saitama, Japan｜福田家

This was my second visit after two years of visits. Fukudaya, a soba restaurant located in a residential area near Minano Station. Fukujiru soba with sesame and miso dipping sauce made with Chichibu miso is a must-eat when you come here. I have been to Chichibu many times, but I recognize it as a restaurant where you can eat rare miso-flavored dipping soup while there are many walnut soba noodles. Soba noodles are Sarashina type and elegant soba. The taste of the soup that you mix the soup of Fukujiru Soba with Sobayu is also delicious. I was eating with tempura at the next seat, but the tempura looked delicious.

I had fukujiru (miso and sesame soup). The noodles were thin, chewy, and exquisite. It's really delicious. The dipping sauce is miso and sesame soup. It looks like the famous walnut soup from the Chichibu region, but it was also outstanding! There are green onions, shiso leaves, and cucumbers as condiments, and the scent of shiso leaves is also great. No complaints. I will definitely come again

I had a simple plate of soba noodles. The spicy soup and refreshing noodles go well together.
