The hamaguri-yaki was grilled by the shop staff, and the salty, soy sauce, and shellfish extracts are mixed to make you want alcohol, and it has a deep taste. I once ate large clams grilled on the Atsumi Peninsula in Aichi Prefecture, and it reminded me of that time. The fried shrimp was the first time I ate it because the miso on the head remained well and it was well mixed with the body! The mother in the store will come along and teach you how to remove the hard part of the head, so you can eat it all from the head to the tail.
