They have their own little farm and pick the vegetables literally when you order. We saw the cucumber we ate being picked up before getting into our plate. They have a 100% soba flour based noodles which is extremely difficult to make as it tends to be crumbling. They make that to perfection. But get there on time because they run out of soba quick. We were lucky and were the last ones. They had to refuse the people afterwards as they didn't have any soba left.
It is a large serving style restaurant. Tsuyu is not very salty, probably because it is supposed to be eaten a lot. I think it's a genealogy of country soba with a little crispness, not Kanto-style soba that is chewy and smooth. This time it was Nihachi soba. There is also 100% soba, so I want to challenge next time. The flour is a gray type ground to the husk.
