Really talented shops don't want too many people to know about them. I would like to post this as a way to repay your kindness, hoping for further prosperity and for the store to continue operating. Four years ago, when I was walking around Shirakomaike Pond, I wanted to eat Shinshu salmon, so I googled it, and this restaurant happened to come up. At that time, I had the "Shinshu Salmon Ara-dashi Salt Ramen", which you don't often see, and was so impressed by its deliciousness that the three of us returned with my wife and mother-in-law this time after the coronavirus pandemic ended. The restaurant is run by a husband and wife team, and has a small atmosphere that can only seat about a dozen people. During the October holidays, the store was temporarily closed the day before to hold an event, and on the day of the event they opened at 12:00 instead of the usual 11:30 because they were making bento boxes. There were other customers who had reservations, so we finally got in around 1:15 p.m. It was difficult to appease my wife and mother-in-law, who were impatient and didn't like waiting, but I tried to kill time at a nearby supermarket, and that was the only way I could give up. This time as well, I ordered ``Shinshu salmon ara-dashi salt ramen and mini salmon bowl set → I ordered medium-sized noodles for an additional 150 yen (as of October 2023)'', and my wife and mother-in-law ordered the same ramen separately ( Comes with Yatsugatake Kogen vegetable salad (homemade dressing) and a small bowl.I ordered the optional free rice (my mother-in-law chose a small serving of white rice, and my wife chose a regular serving of brown rice), and the taste did not disappoint. The flat, medium-thick noodles are not too salty and have a nice flavor to them, and they go well with the soup, which has a nice dashi stock and a light salmon pink color, and the host is very impressed with how delicious it is. I drank it down nicely. Of course, the ``Shinshu Salmon Bowl'' is also delicious. It was light and not too greasy, and was served with rice topped with seaweed and sesame seeds and homemade sauce. I usually like wasabi, but it takes away from the flavor, so I like it as is. The small dish was ``steamed chicken and lotus root mizuna salad'', which also had a good taste. At the time of paying the bill, my mother-in-law asked me a blunt question, ``How do you make it?'' and even though I warned her, ``That's a trade secret, mother-in-law... (lol),'' she happily taught me how to make it. Thank you. The homely and friendly atmosphere is also appealing. I thought that the gentle and exquisite harmony between the husband, who is a craftsman and a keen researcher, and his amiable wife, was reflected in the food and everything else in the restaurant's atmosphere. All three of us were very satisfied and it was a good choice to choose this restaurant again to conclude our trip. (Since I was sitting alone at the counter,) my wife said, ``I was wondering if this is a good way to eat it, but in the end, I added rice to the soup and ate it like an ochazuke, and it was really delicious! I was very impressed when I heard that later. . . I didn't have that idea (lol). However, it made me look forward to my next visit. I'll definitely go again someday.
