I really enjoyed the modern, sophisticated and wonderful space, and Madam's gentle service that soothed me. Just like the space, you can enjoy a variety of modern and sophisticated dishes backed by reliable techniques. Dishes that take Shinshu ingredients seriously and bring out the best in the ingredients. The first half has a modern and contemporary impression, especially the vivid color of the beetroot mousse and herb oil, and the combination of the beetroot, shine muscat oil, and beetroot is exquisite and incredibly delicious. From then on, the restaurant takes on a modern look, but brings to the finale delicate, classic dishes that are not heavy but are served using traditional cooking techniques. The flow of the course, which gradually builds up towards the second half, is smooth and as expected. From the appetizers to the small sweets, everything is meticulously prepared, and when you think about it all by yourself, it's astonishing. Even including the wine pairing, the price was extremely reasonable considering the contents. I understand why it is so hard to get a reservation, and I was very happy to have found such a wonderful restaurant.
