Shizenkyo is a brand that I often drank when I was in Fukushima, and this time I decided to try Arabashiri. It was very delicious, with a fresh aroma and a strong flavor. The tempura was still crispy and I enjoyed the seasonal flavors. The wild vegetable tempura was in limited quantity. The thinly sliced ​​soba noodles were chewy and went well with the strong soup stock. 2022.11.13. Revisited. I visited again because I heard that the new soba noodles were available. This time I have a driver (my wife), so I'm drinking. The first drink was Ibaraki's junmai sake "Morishima" (I believe...). This is provided by Mokkiri. delicious. Perhaps because it's a new soba, it has a light green color and looks delicious. Juwari soba doesn't have a tether, so it easily breaks and becomes short, so it's not a bocchi-mori. On October 11th, I went to "Handmade Soba Aizaya" which just opened in Togakushi. I ordered tempura zaru soba. The thinly sliced ​​noodles are served in large portions, typical of Togakushi. Nihachi's soba noodles are chewy and have a good aroma, and paired with the soba soup that has a strong dashi stock, it is very delicious. The batter on the tempura is crispy and fried, and the wild shrimp is plump. The soba soup after the meal was also very rich. When I spoke to the owner, he told me that the soba noodles are made from Togakushi and are ground coarsely and finely in a stone mill using a homemade flour blend. The soba soup is made by combining dashi made from dried bonito flakes and Rishiri kelp with domestic whole soybean soy sauce and mirin made from domestic rice and rice malt. The sugar is made from domestic sugar cane, and the oil used for frying is non-GMO rice oil. So I thought ¥1,540 was cheap. I was driving a car today, so I couldn't drink it, but the sake is also carefully sourced by the owner, and the brand changes depending on what's in stock at the time. . I definitely want to try it next time I go. Also, the beer was cheap at ¥550 for a large bottle of Ichiban Shibori. Since it is basically run by a husband and wife, you may have to wait during busy times.

Togakushi Soba is one of the many soba restaurants that I have been interested in for a long time. I thought it would be crowded at lunch time, so I went in before 13:00, but the soba noodles were gone and I was the last customer, so it might be good to come in early. I ordered the tororo zaru soba (1,100 yen) and the tempura platter (880 yen). Last customer? Perhaps because of this, the owner served a lot of soba noodles. The soba was 28 soba, and the thin noodles peculiar to Togakushi soba were good for the throat, and it was very delicious together with the noodle soup. The service staff always greeted me with a smile, and I was able to spend a pleasant afternoon. I gave the atmosphere 4 stars. This is an evaluation compared to an old-style building that is often found in soba restaurants. It was a modern building, although it didn't have the atmosphere of an old private house, but it was clean and the view of Mt. Togakushi from the large windows was wonderful. It is a shop I want to visit again.
